Capturing the fresh, green aroma of an in-season tomato plant posed a unique challenge. The breakthrough was a technique that preserves complexity by leaving delicate flavors intact: we combine the oil-rich stems and leaves of tomato plants with a cucumber and apple pulp. The mixture is clarified and blended into a London dry gin. This garden-fresh gin is brought to proof using a low-PH water, to match the brightness of a ripe tomato.

Covalle Tomato-Water Gin was created in 2024, though its true origins lie in a collection of shared experiences and inspirations. Potluck dinners built around peak-season tomatoes, the scent of gardens and greenhouses, daydreams of life in a charming beach town, romantic martini bars, and the easy comfort of a gin and tonic on a back porch: each of these played a role in shaping a spirit we are incredibly proud to make.
Covalle was born from imagination and experimentation, and yet it feels deeply familiar. It took an enormous amount of work to realize, and yet it seems as though it has always been here. It belongs to a sunny stretch of coast, "world famous" for its tomatoes as much as for its boardwalk oyster bars, its lively pier, and its sun-soaked beach clubs scattered among volcanic outcroppings.
